How To Make This Lemongrass Chicken Recipe

1. Combine lemongrass, lime juice, garlic, fish sauce and vegetable oil and marinate the chicken for at least 30 minutes but overnight is best.
2. Spray the baking tray with vegetable oil and place the chicken skin side up and spray it with oil again.
3. Bake at 400F for about 20-25 minutes and broil for about 3 minutes (keep an eye on it depending on your oven temp!)
4. Serve with Vermicelli Noodles, Fresh Veggies with Cilantro (I like spring salad, cucumber and carrots), and Nuoc Mam Sauce for dipping!

  • It’s best to marinate it overnight but you can get away with 30 minutes if you are in a pinch!

  • Make sure the marinate gets under the skin of the chicken to get the best flavor.

 

Lemongrass Chicken Recipe

Ingredients:

4 Stalks of Lemongrass (Finely chopped)
Juice of 1.5 Limes (save the other half to garnish!)
5 Cloves Minced Garlic
2 Tbsp Fish Sauce
1 Tbsp Vegetable Oil
6-8 Boneless Chicken Thighs (Skin on)

Vegetable Oil Spray (If you don’t have a spray, you can brush it on!)
