How To Make and Serve This Crispy Chicken Sandwich Recipe
This Crispy Chicken Burger is ordinarily made with chicken breast, but it can be easily made with chicken thighs with the following steps:
- Prep the toppings by cutting up the tomato, lettuce, pickle, red onion and cheese.
- Heat up a frying pan and melt butter and start toasting the buns.
- Set up your chicken station by preparing the potato starch/flour, egg, and panko bread crumbs with seasoning in dipping bowls.
- Take out the chicken thigh or breast and cut a few slits in the middle to help it flatten easier. Place the chicken between parchment paper or plastic wrap and flatten it out with t rolling pin.
- Dredge the chicken in potato starch/flour, beaten egg, and panko bread crumbs.
- Fry the chicken in oil.
- While the chicken is frying, prepare the Sambal Olek Mayonnaise.
- Once the chicken is fried, assemble the burger and serve!
Crispy Chicken Sandwich Recipe Tips
I’ve made this recipe a few times with chicken breast and thigh (with and without skin). Personally, I like chicken thighs better but this is a personal preference. Whether you use chicken breast or thigh, make sure to cut a few slits in the middle and flatten it out well with a rolling pin or meat tenderizer.
You can easily buy Sambal Olek in an Asian grocery store! However, if you do not usually use this condiment, you can easily make it at home with Thai chili peppers and chop/crush it into fine paste. I’ve included the recipe below but the trick is to add just a sprinkle of salt to create into paste. Other subsitutes for this is siracha or gogchujang. Sambal Olek is also usually made with rice vinegar but I saw that the Cactus Club used capers for the acidity. Both work very well!
My secret to super crispy chicken is using potato starch instead of flour. However, if you do not have it, you can easily substitute with corn starch or flour.
The Crispy Chicken Sandwich Recipe
Ingredients
Makes 2 Burgers
Chicken
2 Chicken Boneless Chicken Thighs or Breast (I prefer thighs)
1/2 Cup of Potato Starch or Flour
1 Egg
1 Tsp of Corn Starch
1 Cup of Panko Bread Crumbs
1 Tbsp Garlic Powder
1+1/4 Tsp Salt
1+1/4 Tsp Pepper
1+1/4 Tsp Smoked Paprika
1/4-1/2 Cup of Canola or Neutral Oil
Sambal Olek Mayo
1/4 Cup of Mayo
1 Thai Red Thai Chili, Seedless (Add more if you like it very spicy)
Pinch of Salt
1 Tsp Gogchujang
4 Capers or 1/2 Tsp Rice Vinegar
Bun and Toppings
2 Tbsp of Butter
2 Brioche Buns
2 Slices of Emmental Cheese
2 Tbsp Ketchup
1 Small Tomato (Sliced)
1/4 Small Red Onion
1/4 Cup of Shredded Iceberg Lettuce
2 Pickles (Sliced)
Instructions
- Prep the toppings by cutting up the tomato, lettuce, pickle, red onion and cheese.
- Heat up a frying pan and melt butter and start toasting the buns. Set aside.
- Set up your chicken station by preparing the potato starch/flour, egg, and panko bread crumbs with seasoning in dipping bowls. For extra crispiness, add 1 tsp of corn starch to your egg and season the panko breadcrumbs with 1 Tbsp of garlic powder,1 tsp of salt, and 1 tsp pepper (use the 1/4 tsp for after).
- Take out the chicken thigh or breast and cut a few slits in the middle to help it flatten easier. Place the chicken between parchment paper or plastic wrap and flatten it out with t rolling pin.
- Dredge the chicken in potato starch/flour, beaten egg, and then the seasoned panko bread crumbs.
- Fry the chicken in oil.
- While the chicken is frying, prepare the Sambal Olek Mayonnaise. If you are making the Sambal Olek Mayonnaise from scratch, begin by removing the seeds from the chili pepper and then finely mincing it. The trick is to just add a sprinkle of salt to help crush it to a fine paste (a mortar and pesto works great too!). To bring in some acidity into the mayo, add in a few capers and finely mince it as well. This is to substitute the traditional rice vinegar so you can use that as well! Add in gogchujang (Korean red pepper paste) and mayo and stir to combine. You can also purchase Sambal Olek sauce from an Asian grocery store or use siracha as a quick substitute.
- Once the chicken is fried, season it again with salt, pepper, and smoked paprika before adding in the emmental cheese. Cover the pan to melt the cheese or use a small blow torch.
- Assemble as follows: Place ketchup on the bottom bun, then the chicken with cheese, tomato, onion, shredded lettuce, pickles and top bun with the Sambal Olek Mayonnaise. Serve immediately and enjoy!
